Traditional Chinese Cooking Class YangshuoLearn Chinese cooking with the expertsYangshuo has many hidden gems and doing a Traditional Chinese cooking class is one of them. A cooking class Yangshuo can be done at several places but if you ask me, I would do it with Linda Liang and her staff at Cloud 9.
Linda on CCTV 4 As always when visiting Yangshuo there's many surprises. This time Linda told me she had the a team of the Chinese broadcasting channel CCTV 4 visiting. It's another proof that Linda's class is top notch. The date of broadcasting
of the show is not yet confirmed but it will be in October. We'll keep you informed
The first question you may have is why you would want to learn to cook, the second may be what you will learn, in other words, what will you learn? To start with the first question, its probably best to look where you will have your cooking class. Chinese cooking is extensive and different from other kinds of cooking, thus a cooking class gives you the opportunity to explore a little of the Chinese way of cooking.
In Yangshuo there are many restaurants, but there's only one restaurant with the style and quality as what Cloud 9 offers. This is because Linda Liang has a vast knowledge of cooking (she's even mentioned by Kylie Wong, an Australian TV cooking personality). Linda knows her stuff. You can read more about Cloud 9 here.
Cloud 9 is one of the businesses of Linda Liang and William Lu
(other businesses they have are the spectacular
Snow Lion Resort and the
7th Heaven Cafe & Hostel).
Cloud 9 is considered by many the best Chinese restaurant in Yangshuo.
At the top of the building there are two kitchens available for cooking classes. In total there is space for around 20 students (2 groups). The driving force behind Cloud 9's cooking class. I followed two groups cooking two very different dishes. The first group prepared dumplings and sizzling beef while the second group prepared dumplings, sweet & sour pork and Sichuan Gong Bao (pork dish). Both groups had their own teachers. I followed the group with Panda, a local lady employed by Linda as one of her teachers as Linda is sometimes too busy with other activities. This is no problem, as Linda's teachers are as good as Linda herself. As said, the kitchen was spotless. For all students, vegetables and meat was already washed and presented in the right amounts for one person.
Panda explained every detail first, showed the students how to cut and then the students followed. One by one the vegetables and meat were prepared for cooking, gong bao first, followed by the sweet and sour pork and last the dumplings. Panda showed the students how exactly a dumpling should look like which turned out a lot more difficult then most students expected.
After preparation it was time to start cooking. The prepared dumplings went first. After creating the dumplings, they were steamed and later eaten. For the Gong Bao Chicken and the Sweet and Sour Pork, Panda explained again by first showing herself the technique. She claimed not to have any knowledge of cooking until about 4 years ago when she was employed as a teacher in Cloud 9. But her skills were amazing. With dry humor (your dumplings look really horrible, grin grin), she made the class feeling very comfortable.
As I did not attend the class myself, but only watched so I was able to shoot plenty of photos, I had nothing to taste but Panda gave me her portion. "I eat it everyday, and I am a little tired of dumplings", she said.
I tried the Gong Bao and the dumplings and they were delicious. Then I had a brief look at the other group who had prepared the sizzling beef. That too looked amazingly good though I didn't try it myself.
The class took about 3 hours including consuming the dishes. Was I surprised by the cooking class Yangshuo? Yes and no. I knew Cloud 9 as an excellent restaurant so I expected good food. I did expect good teachers and they were even better then expected. I had no idea how the Cloud 9 staff would prepare the lessons and the way it was done, was excellent. I can recommend Linda's cooking class in Cloud 9 restaurant as an excellent choice. Or, as David from New Jersey said: "I couldn't be bothered by the cooking class at first, but it was a first class and unforgettable experience". After such a statement, what else can I add? Panda starts her lesson,
after introducing herself, with explaining the different things on the
kitchen table for each student, starting with the wok. After that she
explained where to find ingredients as salt, pepper, oyster sauce,
sugar etc.. The group I followed was supposed to prepare 3 dishes:
dumplings, sweet and sour pork and gong bao chicken.
