The best Chinese restaurant in Yangshuo gives away some of their secrets!

Leading Chinese restaurant in Yangshuo, Cloud 9, gives away some of their secrets. This month the most recommended dish is their Beef in hot chili & numb sauce, a Sichuan dish which is spicy.

Master chef Linda gave us the recipe and some additional tips of this excellent dish. Have fun in preparing and yes, you have to try this when you visit Cloud 9.

Beef in hot chili & numb sauce

Ingredients:

150 g beef against the grain thin sliced to pieces, marinade the meat with egg-white, corn starch, salt, cooking oil ,soy sauce, meat tenderize (from papaya), leave it around 10 minutes
Bean sprouts, cabbage cut in one inch long, ginger, garlic all chopped
Chili bean paste, salt, light soy sauce, Sichuan numb pepper, red chili oil, chili powder on the table.

Cooking Method:

Stir fried the Chili bean paste in the hot oil, then add in some water, when the water is boiling then add in the Bean sprouts, cabbage, season the dish with salt, soy sauce, cook for 1 minutes then move out to the bowl.
Keep the boiling sauce, add in the beef and cook for 2 minutes then move out to the bowl, put the beef on the top of the vegetables and put all the sauce in the bowl as well.
Put the chili powder and Sichuan numb pepper on the top of the vegetables, the ginger and garlic also one the top as well. Heat 2 big table spoon of oil and one spoon chili oil. After 1/2 minutes then put the hot oil on the top of the beef. Some spring onion, white pepper, sesame oil, one piece of coriander, put on the top of the dish, ready to serve.

Tips of the dish :

Marinade the beef need by your own hand, not using the spoon ,then the flavor easy goes into the meat .
Put a pinch of sugar in the hot sauce to balance the spicy.
On the step 3, the hot oil need be smoking, then it’s hot enough, when your are eating, your room will full of smells.
